Easy Mexican Style Sauce

Do you ever find yourself browsing through your pantry, trying to figure out what to cook for supper?? That was me last night. I didn't want to make a dreaded trip to the grocery store, so I knew I'd need to be creative. I knew that I had some brown rice on hand, and that was enough to get the ideas churning. I ended up creating a delicious Mexican-style sauce to pour over the rice, and it was all from ingredients that I already had in stock!

Ingredients:

(1) Small whole chicken - cooked and deboned

(3) 8-oz. jars of Pace Picante sauce (I used Medium, but choose intensity according to your own personal preference)

(2) 15-oz. cans of tomato sauce

(1) 15.25-oz. can of corn, drained (Regular, or Mexican style)

Directions:

Combine all ingredients in a large sauce pan, and stir to mix well

Cook, uncovered, on medium-high heat until boiling (stirring occasionally)

Once boiling, reduce heat and cover.

Let simmer for about 20 minutes, stirring occasionally

After the cooking is done, you're all set! Pour over brown rice, and enjoy!

#MakeItYours Christmas Cookies!

This post is sponsored by Country Crock, who sent me a coupon to get a tub of Country Crock free, in exchange for creating my own "Make It Yours" recipe. I love creating things in my kitchen, so I was really super excited about this!

Country Crock's "Make it Yours" recipe is as follows below!

Ingredients:

1 Cup Country Crock
1 to 2 Cups of your choice of mix-ins
3/4 Cup packed brown sugar
3/4 Cup granulated sugar
1 large egg
1 egg yolk
2 tsp. vanilla extract
3 Cups all-purpose flour
1 tsp. baking powder
3/4 tsp. salt
1/4 tsp. baking soda

Directions:

Preheat oven to 375. Mix brown sugar, granulated sugar, Country Crock, egg, egg yolk, and vanilla in large bowl until well mixed.

Stir in flour, baking powder, salt, and baking soda until blended (dough will be soft and creamy).

Add mix-ins (such as chocolate chips, sprinkles, nuts, dried fruit, etc.) into the dough until every spoonful of dough has some of the delicious mix-ins.

I personally used semi-sweet morsels, and white chocolate morsels for mine!

Drop dough by rounded tablespoonfuls onto ungreased baking sheets 3 inches apart.

Even though it says to drop the dough by rounded tablespoonfuls, I decided to get creative, in the spirit of "Make it Yours," and the spirit of Christmas!

Bake 10 to 12 minutes until edges are golden. Cool 1 minute on wire rack. Remove from rack and allow to cool completely.

Our cookies came out big and puffy, and CHRISTMAS-Y!!!

If you're using Country Crock's Make it Yours recipe, how do YOU plan on making it yours? I'd love to know!

My name's Jen, and I'm married with 3 beautiful little girls! I'm all about finding deals, and finding ways to save money. I also have a knack for finding awesome freebies, and I love writing reviews on the products I try! I also love finding new ways to earn a little money from home (Who wouldn't want that??).

People are always asking me how I find such good savings, freebies, etc., and are always asking me to teach them how to do it. Now, I'm not very good at teaching, but I AM going to try to help! In this blog, I'll post about; savings and coupon deals, reviews on products received, reviews on online products, etc. I've also found a TON of old family recipe cards from my husband's side of the family, so I'll be posting lots of those too as I try the recipes myself (yummy looking pictures to be included!!).

Anyways, here's to hoping you all enjoy my blog! :)
